Oatmeal Sandwich Cookies

I found this recipe on another blog and it’s wonderful! I just made it for the first time yesterday afternoon with a young friend of mine. It’s kind of time comsuming, but worth it. Sorry, but these are not low in calories!
* 1 1/2 Cups shortening
* 2 2/3 cups packed brown sugar
* 4 eggs
* 2 tsp. vanilla extract
* 2 1/4 cups all-purpose flour
* 2 tsp. cinnamon
* 1 1/2 tsp. baking soda
* 1 tsp. salt
* 1/2 tsp. ground nutmeg
* 4 cups old-fashioned oats
Filling:
* 3/4 cup shortening
* 3 cups confectioner’s sugar
* 1 jar (7 oz.) marshmallow creme
* 1-3 tablespoons milk
1. Preheat oven to 350 degrees
2. In a mixing bowl, cream shortening and brown sugar well.
3. Add eggs, one at a time, beating well after each. Add vanilla.
4. Combine flour, cinnamon, baking soda, salt, and nutmeg, and add to creamed mixture.
5. Stir in oats.
6. Drop by rounded teaspoonfuls 2 inches apart onto lightly greased baking sheets.
7. Bake at 350 degrees for 10-12 minutes or until golden brown.
8. Remove to wire racks to cool.
9. For filling, in a mixing bowl, cream shortening, sugar, and marshmallow creme.
Tip: I found it to be much easier to use a hand mixer rather than trying to stir by hand.
10. Add enough milk to achieve spreading consistency.
11. Spread filling on the bottom of half the cookies and top with remaining cookies.
12. Eat and enjoy!
